ABOUT

Founded in the 1950’s, Ca’ Bianca is located in Alice Bel Colle in Piedmont’s viticultural district of Alto-Monferrato. Here, Pier Luigi Borgna crafts world-class, modern-styled wines from an amphitheater of 96 contiguous acres of hillside vineyards. Barbera d’Asti, which excels in this climate, is the focus as the winery puts forth three distinct cuvees each year. Ca’ Bianca also produces top-quality Barolo, charming whites from the heart of the Gavi zone between the towns of Gavi and Novi Ligure, a delicious Moscato d’Asti and Brachetto d’Acqui.

TASTING NOTES

Garnet color tending towards strong blue; intense and ethereal bouquet of vanilla, cloves and clean woodland undergrowth; full, firm but velvety flavor with a fine, very lingering aftertaste of liquorice and ripe red fruits.

FOOD PAIRING

Meat - Beef, game and stews such as beefsteak, lamb, veal, rabbit, wild boar and deer.  Fish - It is better not to serve Barolo with fish since most fish will be completely overpowered, a light red like Bardolino would be a better candidate.  Poultry - Especially wild poultry like guineafowl (in truffle sauce) and pheasant but also duck breast and foie gras.  Pasta - Pasta with a strong tomato or truffle sauce.  Cheeses - Old strong (crumble) cheeses like Parmigiano Reggiano, Pecorino vecchio, old Gouda and old Cheddar, blue cheeses such as Gorgonzola, Danish blue and Castelmagno as well as cheeses with a rich flavor like Fontina and Boschetto al tartufo.
